The professionals working at Center Convention joined forces with the Clementina team for this collaborative project led by the guest chef. The event takes place from August 16th to 31st at the restaurant, which is also located in the Center Shopping Complex, next to... Mercure Uberlândia Plaza Shopping.
The Mediterranean Cuisine Festival by Chef Tyales Veiga
Dishes featuring natural, flavorful ingredients prepared with great skill will delight gastronomy lovers at the 'Mediterranean Cuisine Festival by Chef Tyales Veiga' at Clementina Bar e Ristoranti. Attendees will enjoy a complete and exclusive menu created by guest chef Tyales Veiga, who boasts over 20 years of experience and a well-established international career.
With options for appetizers, main courses, and desserts, the Festival takes place between August 16th and 31st at Clementina, which is open daily from 5 PM and is located in the Mercure Hotel Plaza Shopping. The full menu can be purchased for R$120, and diners will have three appetizer options, four main course options, and three delicious desserts. The dishes combine a variety of fine meats and fresh, select ingredients, which, with a modern twist, bring to life traditional Mediterranean cuisine recipes, a tradition that has existed for over three thousand years and is considered an Intangible Cultural Heritage of Humanity by the United Nations Educational, Scientific and Cultural Organization (UNESCO).
The delights of the Mediterranean
Among the delicious appetizer options, the public will be able to choose between... Pan Tumaca, a slice of sourdough toast with tomato puree and slices of Jamón, a cured ham with a unique flavor; the Arrow Croquettes which are made with porcini and shiitake mushrooms; and the Salmorejo de Sandía, one of the most traditional dishes in Spanish cuisine, which is a creamy, cold soup made with tomatoes, olive oil, and bread.

Chef Tyales Veiga also prepared four options for the main courses: Pasta Negra Mar y Montaña, a black pasta made with squid ink; Fideuah, which is a dish that includes seafood and fideo, a type of thinner pasta; Lomo Bajo a la Plancha, a grilled entrecôte with wine sauce, roasted peppers, and perfectly fried potatoes; and finally, Grilled Salmon, with grilled salmon with Tzatziki, A delicious Greek sauce, served with grilled vegetables and Sicilian lemon risotto.

To conclude this gastronomic journey, culinary enthusiasts will have the following dessert options: Torta al Limone di Amalfi, a lemon tart that includes white wine, olive oil, and vanilla in the crust; Crema Catalana, a tradition in the Catalonia region of Spain, made with egg yolks, sugar, milk, and cinnamon, and a delicious layer of caramelized sugar; and also Mouhalabieh which is an amazing sweet mixture made with milk and flavored with orange blossom.

With over 20 years of experience, 12 of them in restaurants in Galicia, Spain, Tyales Veiga is a specialist in World Cuisines from Le Cordon Bleu Paris, and a gastronomic chemist from Harvard University. The guest chef, chosen to create and execute the Festival's menu, also has numerous culinary awards and has participated in international gastronomic festivals.
