The festival offers a variety of mushroom dishes for the public to enjoy.
The 'Autumn Festival: special mushrooms by chef Tyales Veiga' starts next Friday (19) and runs until May 28. The complete menu – starter, main course and dessert – was created by the restaurant's Food and Beverage team, which is also responsible for catering at the Center Convention.

The mushroom dishes that will be presented at the Festival have been created to guarantee a true journey through the flavors of these foods. Threshold – As the first appetizer option, the dish features a delicious free-range chicken egg served on a sauté of mushrooms with different textures, seasoned with Jerez, a fortified wine produced in Spain.
Arrow Croquette Now, a 'relaxed' starter that appeals to a wide audience. The delicious homemade croquettes come in a version with dried porcini mushrooms and shiitake mushrooms topped with black garlic aioli.
Main courses
Crossing the Forest – For main courses featuring mushrooms, one option is a creamy mushroom risotto – with Lambert, Pearl, and Shiitake mushrooms – served with Parmesan cheese, green asparagus, and aromatic herbs.
From the Sea – a delicate handmade salmon cannelloni served with shrimp sauce, garnished with seasonal mushrooms – button mushrooms, grey oysters, and salmon hiratake mushrooms. Finally, the dish is finished with crispy sweet potato strands.
From the Pasture – a mushroom dish that offers a combination with red meat. A succulent filet mignon prepared with a sauce of shimeji mushrooms, brown oysters, and porcini mushrooms – and accompanied by parmentier truffled.
Desserts
Sweet Land Finally, for dessert, the delicious Sacher torte, made with chocolate and very famous in Vienna, is served with whipped cream and hazelnut liqueur.
Intxaursalsa The last dessert option is prepared with walnut cream, milk, sugar, lemon, and cinnamon. It's worth noting that it's one of the most well-known sweets in the Basque Country.
