Success at the 1st edition of the Meat Flavors Festival
The first edition of Sabores da Carne (Flavors of Meat) took place in 2023 and won over the public with original dishes from the Clementina team, featuring premium beef cuts in different preparations. Now, the second edition brings new dishes – also created by the Clementina food and beverage team – with the same unparalleled flavor and seasoning.

Just like the first edition, the second Meat Flavors Festival was designed to highlight premium beef cuts on the menu, perfectly paired with side dishes.
The difference between the two editions lies in the format. In 2023, the Festival offered main course options with different cuts of meat. This time, Sabores da Carne comes with a complete menu, including appetizer, main course, and dessert. Check out the options below.
Tickets
- Truffled Filet Mignon Mosaic: Truffled filet mignon mosaic with activated charcoal and spicy tomato cream with cheese and herbs.
- Tartare and avocado: filet mignon tartare with avocado and a hint of mint, finished with crispy leek and basil oil.
Main
- Beef Wellington: the traditional Beef Wellington in rosemary sauce with golden potatoes, grilled asparagus sautéed in clarified butter, finished with confit tomatoes.
- Baby beef in sesame crust: a succulent baby beef in a sesame crust accompanied by baroa gnocchi in a creamy truffle mushroom sauce.
- Entrecôte with Périgueux sauce: another main course option is a grilled entrecôte served with potato rösti and crispy bacon, finished with Périgueux sauce, a classic of French cuisine, prepared by reducing white wine with a blond roux, adding truffle oil and thickening it with red wine.
- Ojo de bife: the so-called Ojo de Bife is a cut taken from the central part of the Ribeye, also known as Ancho or Ribeye Steak. Characterized by its flavor and tenderness, it is prepared with a woody gorgonzola and confit garlic sauce and accompanied by a creamy plantain risotto with saffron.

- Pineapple mille-feuille: the famous French mille-feuille dessert gets a Brazilian twist with caramelized and baked pineapple inside mille-feuille pastry, served with coconut ice cream and finished with orange honey.
- Golden Pudding: one of the most beloved desserts in Brazil, a condensed milk pudding finished with golden caramel sauce.
- Banoffee: Finally, a Banoffee served in a glass, made with banana, whipped cream, and a thick caramel sauce, placed on a layer of buttery biscuit baked at medium temperature.
