The menu for the gastronomic festival is designed by guest chef Tyales Veiga, who was also responsible for the menu at the Mediterranean cuisine event that took place in August. In this edition, the complete menu can be purchased for R$120. The public will have three appetizer options, three main course options, and two dessert options.
The dishes at the Festival combine classic Argentinian recipes and ingredients, which are strongly influenced by Italian and Spanish cuisine, with Brazilian culture. The developed menu guarantees a unique gastronomic experience, where the nuances of Argentinian and Brazilian flavors can be perceived.

The appetizers feature classic Argentinian recipes.

Argentinian Creole EmpanadaFirst of all, the famous Argentinian empanada is a worldwide success! This delicacy can be baked or fried, and has different seasonings and fillings depending on the region of Argentina.
Vitel TonéAlso called Vitello Tonnato, it's a dish made with slices of beef served with a creamy anchovy and tuna sauce.
Deconstructed ChoripánIn Argentina, this sandwich, nicknamed "Chori," gets its name from the combination of chorizo (sausage) and pan (bread). It's typically seasoned with chimichurri or salsa criolla, and other spices. At the Festival, attendees will enjoy a deconstructed version of the choripán, yet retaining its characteristic flavor.
Main course options

Ribeye steak with chimichurri: The ribeye steak is one of the most iconic cuts of meat in Argentinian steakhouses and parrillas. This cut has the perfect combination of tenderness, flavor, and juiciness. At the gastronomic festival, it will be served with rustic cassava puree, smoked bacon, and cheese.
Gnudi de Ricota A typical Tuscan dish that has become a tradition in Argentina. They are delicate little balls made of ricotta and Parmesan cheese. The recipe has a touch of sage and basil, accompanied by a rustic tomato sauce perfumed with fresh herbs.
San Martín de los Andes Trucha Fillet: A reinterpretation of Patagonian trout. It will be served with grilled potatoes, fennel emulsion, and a minty Provençal sauce.

Dulce de Leche Pancakes: A delicious pancake with dulce de leche, the national dessert in Argentina. Created by chef Tyales Veiga, the recipe features a batter flavored with orange and nutmeg, filled with Argentinian dulce de leche, and served with vanilla ice cream.
Pear in Wine: These are transparent slices of poached pear in red wine. The pear is cooked cold in the wine, and it's possible to distinguish the flavors of the spices of each ingredient in every bite.

Tyales Veiga was the guest chef who created the menu for the “Mediterranean Cuisine Festival by Tyales Veiga,” which took place last month at Clementina. Now he is also creating dishes for the festival that highlights Argentinian gastronomy. With over 20 years of experience, 12 of them in restaurants in Galicia, Spain, Tyales Veiga is also a specialist in World Cuisines from Le Cordon Bleu Paris, and a gastronomic chemist from Harvard University.
