The 2023 season of gastronomic festivals at Clementina Bar e Ristoranti continues to bring new features. The Center Convention, which, like Clementina, is part of the Center Shopping complex, continues to support these events and participates in this new edition. The star this time? Peruvian food!
The 'Peruvian Cuisine Festival by Chef Tyales Veiga' takes place from February 10th to 19th, and features a complete menu with appetizer, main course, and dessert. Aromatic ingredients, with colors and flavors that convey the personality of Peruvian cuisine, were chosen by the chef to compose the dishes.
Despite its rich culinary heritage, Peruvian cuisine is still not widely known. With the aim of showcasing diverse flavors, dishes, and recipes, Clementina is hosting the 'Peruvian Cuisine Festival by Chef Tyales Veiga'. The full menu can be purchased for R$140 per person.

First, it's important to highlight the diversity of Peruvian cuisine. With a strong influence from Creole cuisine, Full of spices and local ingredients, when we talk about the cuisine of this country, we can expect many colors, flavors, and aromas.
Secondly, when chef Tyales Veiga was developing the Festival menu, one of the main objectives was to showcase the power of Peruvian cuisine.
“We wanted to show how rich this cuisine is in ingredients, and that by combining this richness with contemporary gastronomic techniques, the result is dishes with great flavor and a touch of modernity,” Veiga points out.
Finally, the chef also mentions that the dishes cater to a wide variety of tastes. Options with beef, pork, fish, and shellfish, for example, have been developed.
Tickets
The appetizers at the 'Peruvian Cuisine Festival by Chef Tyales Veiga' are a 'seafood triad'. This is because they are options that include salmon, shrimp, octopus, or crab. All are richly seasoned with spices and other ingredients, such as mango or olive emulsion, which enhance the flavor.
- Nikkei Ceviche: An adaptation of the traditional Peruvian ceviche to Nikkei cuisine, a fusion of Peruvian and Japanese culinary traditions. The Festival features a ceviche with salmon, shrimp, avocado, mango, and a mix of spices. Certainly a refreshing and flavorful appetizer.
- Pulpo al Olivo: Octopus is one of the most famous proteins in Peruvian cuisine. In this dish, it is served with a delicious olive emulsion.
- Cause of CrabA truly Peruvian recipe, featuring a crab meat "salad" accompanied by a yellow potato purée, both seasoned with spices and seasonings.
Main courses
When we talk about the main dishes, we see traditional Peruvian food combined with other techniques and cuisines. To give an example, a spoiler: some options include glazed pancetta or shoyu, which are processes and products originating from other countries.
- Chaufa Capón: One of the main course options showcases the full power and diversity of Peruvian cuisine. On top of rice richly seasoned with soy sauce and other spices, there's a kind of 'egg tortilla', pieces of chicken seasoned with Kion, and glazed pancetta. It's served with tamarind sauce for a harmonious accompaniment.
- Lomo Saltado: It's a well-known dish that combines the traditional Chinese stir-frying technique with Peruvian ingredients. Therefore, the public will be able to sample a Peruvian dish that includes filet mignon, french fries, yellow bell peppers, tomatoes, soy sauce, and more.
- Fish Sauce: The star of the last main course option is tilapia. These are delicious fried fish fillets, accompanied by cassava, red onion, and a broth with regional spices.
Desserts
Finally, dessert! There are two options designed to harmonize with the previous dishes and end this gastronomic journey through Peruvian cuisine on a high note. The delicious desserts have a light and balanced sweetness to guarantee the best experience.
- Keke de PlátanoTo conclude the gastronomic experience, there are two dessert options. The Banana Cake features one of the most beloved fruits in Brazil: the banana. Specifically, it's a soft cake recipe that uses the fruit, chopped walnuts, and cinnamon to enhance the flavor. It's served with vanilla ice cream for an even lighter touch.
- Limeña's Sigh: One of the most typical Peruvian desserts. It has a sweet base topped with a vanilla-flavored meringue.

In 2022, Argentinian, Italian, and Mediterranean cuisines were the stars of the gastronomic festivals at Clementina Bar e Ristoranti. This year, the Arabic food festival has already taken place, and now it's Peruvian cuisine's turn.
The Food and Beverage team at the Center Convention is responsible for developing and executing the menu for the festivals. Similarly, chef Tyales Veiga, in addition to leading the kitchen at Clementina, also works with our F&B team at the various events held at the convention center.
The goal of these actions? To promote world gastronomy, combining contemporary techniques that are widely used in Clementina's dishes with the different ingredients and flavors from around the world.
