As mentioned earlier, the Center Convention and Clementina catering team develops and prepares the dishes for the Festival, which takes place from this Friday (15) until September 24 (Sunday).

Clementina's festivals aim to showcase diverse, often little-known cuisines, as well as products – such as red meat – in different versions and seasonings. For this gastronomic festival, the Clementina team developed eight dishes with different cuts, side dishes, seasonings, and preparations.

The dishes feature different cuts of meat, preparation techniques, seasonings, and side dishes that promise to please all tastes. The goal is to offer diversity and also combine elements from different cuisines to make the festival unforgettable. Check it out:

  • Paillard & Pasta: delicious A pounded filet mignon cut, served with fettuccine and a fondue of Parmesan and Gorgonzola cheeses.
  • Chateaubriand Fillet Mignon: A succulent and exquisite filet mignon, with a dark sauce made from vegetables, mushrooms and wine, garnished with rustic potatoes with butter and rosemary.
  • Filet de Beef au Poivre Vert: This dish option is a classic French recipe! Grilled filet mignon served with a creamy green peppercorn sauce and potato risoles with a touch of butter and thyme.
  • Porteña-style sirloin tapa: Tapa de Cuadril is the Argentinian version of the traditional picanha steak. The dish features thin slices of grilled picanha, served with gremolata – a dressing of finely chopped garlic and parsley with lemon zest – grilled vegetables, and eggplant purée with smoked paprika oil.
  • Angus Picanha with Riso Cream: Grilled Angus picanha steak served with creamy cheese risotto and crispy green kale.
  • Filet Clementina Surf And Turf: Grilled and sliced fillet accompanied by poached shrimp flavored with wine and fresh asparagus with julienned carrots in olive oil.
  • Steak in a Crust: Grilled filet steak topped with a herb and panko crust, served with cheese aligot and fresh mushrooms flavored with a wine and spice reduction.
  • Meatball: Finally, the last dish option brings Meatballs made with a blend of picanha steak, gratin cheese, and truffle cream, served on a slice of grilled focaccia.
