Amazonian cuisine at Clementina Bar and Ristoranti

Between March 12th and 25th, this cuisine, so important to the country, is the star of the Amazon Flavors Festival at Clementina Bar e Ristoranti, which, like the Center Convention, is part of the Center Shopping Complex.

The Flavors of the Amazon festival opens the Clementina festival season with ingredients, techniques, and even the presentation of dishes that evoke Amazonian cuisine. Rafael Oliveira, Chef at Clementina, speaks about the idea of bringing a part of northern cuisine to the festival. “We are starting our 2024 festival season in a very special way, highlighting a 'part' of Brazilian cuisine that carries many stories and is part of my family's history, with deep flavors and unique, typical ingredients,‘ he emphasizes.

First, it's worth emphasizing that the seven dishes prepared feature different cooking methods and ingredients typical of Amazonian cuisine. Fish, for example, is one of the main proteins used in the region's dishes due to the wide variety of species, and it will also be present on the Festival's menu, bringing lightness and flavor.

In addition, other typical ingredients such as açaí, tucupi, cupuaçu, Brazil nuts, and more are also present in the dishes.

Tambaqui de banda: Delicious tambaqui ribs served on a bed of aromatic farofa and accompanied by garlic and arugula aioli emulsion.

Pintado fish broth: A flavorful, creamy fish broth made with painted fish in palm oil and a base of bell peppers.

Duck in tucupi sauce: One of the most traditional dishes of Amazonian cuisine, at the Festival it features duck thigh prepared sous vide, finished in a tucupi reduction and accompanied by rice with Brazil nuts and cherry tomatoes.

Pirarucu confitBraised pirarucu served with a creamy bean sauce, accompanied by black risotto, banana, and cassava chips.

Aruanã of the earth: Arowana fillet – a flavorful freshwater fish – prepared in cashew butter and rosemary, served on a bed of plantain puree with aromatic physalis.

  • Dessert
    Acai with cumaru:  A delicious and aromatic açaí cream with crunchy banana and nuts, sprinkled with cumaru – known as the “Amazonian vanilla”.

Cupuaçu cream: Cupuaçu mousse – made from a fruit widely used in Amazonian cuisine – a creamy, double-layered dessert with a reduction of the fruit itself. The dish is finished with cocoa nibs, milk chocolate, and sliced almonds.
