Cod is one of the most widely used foods in world cuisine, and this age-old ingredient is the star of the new festival at Clementina Bar e Ristoranti. Maintaining tradition, the Center Convention – which, like Clementina, is part of the Center Shopping Complex – is present at yet another edition of the gastronomic festival. 

The Cod Festival runs until March 26th and presents the public with a menu of 6 exclusive dishes where cod is used in different formats, textures, and preparations. The food festival takes place at a time when public demand for fish increases due to Lent. To give you an idea, a survey Center for Advanced Studies in Applied Economics (Cepea/Esalq-USP) It was pointed out that the commercialization of fish during the period has an increase of 60%.

Market trends reflect public interest, with consumers tending to reduce their consumption of red meat, and white meat becoming a primary option. Cod, in particular, is one of the most common choices for Brazilian families. Cod is not a fish!

First of all, an interesting fact worth mentioning: did you know that cod is not a fish? Yes, in fact, this is a name given to those species that undergo a salting and drying process. Furthermore, it's worth noting that only some species can be classified as such, such as... Gadus Morhua, Gadus Macrocephalus and the Gadus Ogac.

This process was a revolution in food, because years ago food preservation was difficult, and the practice of salting and drying fish allows for maximizing flavors and longer preservation. 

However, many people don't know what this salting process means, which can be applied to other foods. Generally, it's a preservation and curing process in which...  It reduces water activity. 

In the case of cod, sodium chloride (salt) is commonly used, which, in contact with moisture, forms a saturated salt solution, causing the fish's internal tissues to lose water. 

The menu for the Gastronomic Festival 

At the Clementina gastronomic festival, this food, so important to many cultures, is presented in various preparations on the carefully curated menu. The restaurant's chef, Tyales Veiga, speaks about the inspirations and ideas behind the dishes:

“At the festival, we give different flavors, textures, and aromas to cod. The public will be able to taste more traditional recipes, as well as preparations that combine different products from world gastronomy. Thus, a mix of seasonings and preparations highlight the cod and give different 'faces' to this food that is so widely consumed throughout the world and began to gain popularity back in the Viking era,‘ explains Tyales.

Cod Confit Salad with Bahia Orange 

First, one of the appetizer options is a classic salad from Andalusian cuisine, originally from Spain. The dish features a special citrus dressing made with lemon, grapefruit, and Bahia orange. A depth of flavor with acidic and refreshing tones that pairs very well with the flakes of confit cod. 

Codfish Fritters with Tapenade 

The second appetizer option is delicious cod fritters accompanied by a black olive tapenade made with olive oil, thyme, and Sicilian lemon. To give an example, it's a... A pâté made from a mixture of olives, and sometimes with capers and anchovies.

Main dishes of the Gastronomic Festival:

Codfish à Lagareiro 

Now, speaking of the main dishes of the gastronomic festival, this is a Portuguese recipe in which cod is baked with olive oil, smashed potatoes, garlic, onion, and eggs. But, a unique touch to bring freshness to the palate is the perfectly seasoned snow peas and rice with broccoli. 

Minho-style cod 

This option features ingredients and references to Iberian cuisine, predominant in Portugal and Spain. Thus, the public can enjoy roasted cod with slices of smoked pork jowl, potatoes, and escalivada – a cooking method – of oven-baked vegetables drizzled with olive oil flavored with garlic and rosemary. 

Cod with Miso, Broccoli and Dashi 

This dish from the gastronomic festival draws inspiration from oriental cuisine. It's a surprising and delicious version of cod loin glazed with miso, mirin, and sake. In addition, it's served with gohan rice and dashi, which are typical Japanese ingredients and seasonings.

Risotto al Baccalà alla Vicentina 

Finally, one last main course option is the cod risotto alla Vicentina, one of the best recipes in traditional Venetian cuisine. It consists of a creamy risotto with cod cooked in milk with Parmesan cheese, and a touch of anchovy and caper pâté.
